Really, Really Chocolatey Banana Bread
Honestly, this can be breakfast for a kid with a serious sweet tooth or dessert! It is pretty irresistable in my house...

INGREDIENTS
1/2 cup gluten free flour (if no Xantham gum in the flour mix, add 1 tsp)
1/2 cup cocoa powder
1 tsp baking soda
1/4 tsp salt
3-4 bananas, mashed
1/4 cup melted butter
1/4 cup coconut oil (OR 1/4 cup butter)
2/3 cup brown sugar
1 egg
1 tsp pure vanilla extract (pure extraxt is gf)
3/4 cup chocolate chips
1/4 cup milk

STEPS
Set oven to 425 degrees F.
Grease a loaf tin (or line with parchment paper).
Place all dry ingredients into a large bowl. Whisk until blended, then add the chocolate chips.
Place the bananas into another, medium bowl, and mash them.
Add the rest of the wet ingredients (extract and milk) to the banana mash.
Pour the wet ingredients into the dry ingredients and mix until its batter-like. DO NOT OVERMIX.
Add batter to to the greased loaf tin.
Sprinkle more chocolate chips on top (or, go crazy, and add caramel or peanut butter chips on top!)
Place loaf tin in oven for 9 minutes, then reduce the temperature to 350 degrees F. Bake for 45-50 minutes. Test loaf with a toothpick to determine when it is dry (when it comes out of the loaf clean, it is done).
