Simply Yum and Easy Egg Fried Rice

INGREDIENTS

  • 3 cups cooked rice, cold

  • 2 TBSP sesame oil

  • 1 small white onion, chopped

  • 1 cup frozen peas and carrots, thawed

  • 1 can baby corn (optional)

  • 2-3 TBSP GF soy sauce (or Tamari or Coconut Aminos)

  • 2 eggs, lightly beaten

  • 2 TBSP green onions, chopped (optional)

STEPS

  1. Preheat a large pan (or wok) over medium heat. Add the sesame oil, peas, carrots, corn, and onion. Cook until tender. 

  2. Move the vegetable mixture to one side of the pan. Pour the eggs onto the empty half of the pan and scramble with a spatula until cooked. Mix together the eggs and the vegetables. 

  3. Add the rice to the eggs and vegetables, then pour soy sauce on top. Stir until everything is mixed. 

  4. Sprinkle the green onions on top, if you want.
