Taco Pasta

Easy lunch served hot or in a thermos. Rich and creamy, it can be garnished with avacado, cilantro, tortilla strips, black beans or sour cream.

Taco Pasta

INGREDIENTS

  • 1/2 lb. (8 oz) pasta (like shells, tagliatelle, bows, etc.)

  • 1 pound ground beef

  • 2 TBSP GF Taco Seasoning (1 packet) or see notes to make your own.

  • 3/4 cup of water

  • 1 cup salsa (jarred or fresh)

  • 1 cup shredded cheddar cheese

recipe notes

- To make your own taco seasoning, mix together: 1 tablespoon chili powder 1 ½ teaspoons ground cumin 1 teaspoon sea salt 1 teaspoon ground black pepper ½ teaspoon ground paprika ¼ teaspoon garlic powder ¼ teaspoon onion powder ¼ teaspoon dried oregano Optional: ¼ teaspoon crushed red pepper flakes

STEPS

  1. Cooked the pasta according to the instructions on the box, then drain.

  2. Cook the ground beef in a pan until browned well.

  3. Drain the fat from the pan.

  4. Add your taco seasoning anf the water; stir to combine. Cook until water has evaporated.

  5. Place the pasta into the pot with the cheese.

  6. Stir to combine. 

  7. Serve immediately and mix with salsa and any other toppings. OR refrigerate to serve later; then reheat and add salsa and other toppings at that time.
